Easy, nutritious and the perfect snack for when you're on the run! These are also dairy free + egg free!
Ingredients:
6 medjool dates
4 tablespoons peanut butter
1/2 cup almond milk
1/2 cup oats
1/2 cup almond meal
1/2 cup spelt flour
2 tablepoons flaxseed
2 tablespoons coconut sugar
sprinkle cinnamon
(water if needed)
Method:
1. Soak dates in hot water and then pit and chop the dates up finely.
Add to a mixing bowl.
2. Add in the peanut butter, cinnamon, coconut sugar, flaxseed and almond milk.
3. Add in the remaining dry ingredients ; oats, almond meal and spelt flour.
4. Mix with a spoon until mixture all comes together like a glossy batter consistency. If too dry add some water.
5. Spoon into a baking dish, press down evenly and bake in the oven at 180c for 20 minutes until firm to touch.
6. Cool and cut into squares.
