The healthiest pancakes you'll ever eat for breakfast!
This recipe is a Kale & Co. favourite. It's easy, healthy and is loaded with protein-rich ingredients.
Serves 2 people.
1 tablespoon cinnamon
1 tablespoon honey / stevia / maple syrup
1 tablespoon almond butter
1 teaspoon coconut oil
1 cup organic greek yoghurt
1 cup fresh blueberries
Whisk up the eggs in a bowl with the cinnamon, honey and almond butter.
Place the coconut oil in a medium heat non-stick pan. Place half the egg mixture into the pan and swirl around until batter touches all sides and creates one large pancake.
Cook gently until golden brown on the bottom, and cooked through on the top.
Slide pancake out and repeat again with remaining mixture.
Once pancakes are cooked and slightly cooled down, place organic greek yoghurt and blueberries. Roll pancakes over, drizzle with some extra honey.
